Introduction

The relevance of ecological style - is that you need to decide on the concept of a cafe, current trends, and modern equipment. You need to choose the price category of the cafe, as it is intended for middle-class people who have the opportunity to eat not at home, but also individually and presentably. Consumers would like to talk to knowledgeable person, who can give competent advice, versed in dishes that can be beautifully presented. It singles out all the similar ones and thus attracts visitors: natural decoration, food.

Graduation theme qualification work is "Design project of a fusion cafe using ecological materials". Every day something new and interesting enters our life. Changes are taking place in all areas: medicine, science, technology, etc. Every person discovers incredible things, finds interesting places for a pastime. And so, the cafe entered the life of people. Every person in the 21st century has visited a cafe several times already. After all, a cafe is a place where you can spend time, have a snack after a long walk, sit with friends, take a break from work and much more.

In this work, a characteristic of a cafe is given, it is indicated how it differs from other public catering establishments, what types of cafes there are in general. Particular attention is paid to the interior of the cafe. A brief description of various interior styles is given. The color scheme of the cafe design, the influence of design on the overall perception of the cafe, as well as the influence of the color scheme on the perception of this object are considered.

In order for the cafe to become just such a place where it will be pleasant to come and spend a little time, it is necessary to clearly and correctly create a conceptual project of the cafe. And then, let it be a place for meetings and dates, a place to eat, to rest and relax, or to meet friends and have fun, but people will return there again and again.

Any coffee shop or cafe should have a kitchen area, a visitor's hall (there may be two halls - separate for smokers and non-smokers), an area for staff, as well as toilet rooms. All this must be taken into account when developing the layout of the cafe. The hall for visitors should have a bar counter, a refrigerator display case, tables, chairs for visitors. To separate the smoking and non-smoking rooms from each other, you can use different types furniture, partitions, columns, walls and other interior elements. Subdued light creates a particularly cozy atmosphere; together with the aroma of coffee, it creates a pleasant environment for communication.

Today cafes and coffee houses are very popular. More and more often, such places are becoming the main place not only for everyday rest, relaxation during a working day at lunch, but also for a weekend getaway to meet and chat in a cozy and calm atmosphere.

Cafe (from the French Café; literally - "coffee") - a catering and recreation establishment, similar to small restaurant, but with a limited range of products in comparison with a restaurant, and possibly also with self-service, consumer relaxation with the provision of a limited range of products compared to a restaurant. Introduced in Russia in 2007, GOST R 0762-2007 "Catering services. Classification of catering establishments" defines the difference between cafes and other catering establishments: restaurants, bars, canteens, snack bars, fast food outlets, buffets, cafeterias, coffee shops, culinary stores ... According to this document: "Cafe is a public catering enterprise for catering and (or without) catering products, selling branded, customized dishes, products and alcoholic and non-alcoholic drinks"

Many of us have noticed that the words "coffee" and "cafe" are very similar to each other. And this is not a simple coincidence, because even in the Middle Ages, a drink that was divine in the opinion of many as long as three thousand years served as an impetus for the development of public institutions, such as coffee houses. The first of them was opened in the Dutch town of Livorno.

The novelty became so popular that by the end of the seventeenth century, such cozy corners were in almost every country in Europe, and in some of them there were an enormous number. In almost all establishments of this type, the process of making coffee was considered a mysterious process that took place in a mysterious twilight. The aroma of this enchanting drink with an elusive haze spread far along the city streets. Nowadays, not every coffee house can boast of reverently preserved traditions of the secrets of making coffee.

Already at the time of the appearance of the first coffee establishments, they were chosen by the nobility and intellectuals. Here you could always sit, discuss philosophical issues, meet friends, learn the latest city news, gossip and have a cup of a charming drink. Examples of such clubs are the music or literary café. In one of them, the Oxford Royal Scientific Society once arose.

The first mentions of such clubs in Russia appeared at the beginning of the nineteenth century. Since their opening, they have become a favorite place for the creative beau monde. Additional services - chess, billiards, reading and discussing newspaper notes - have become a characteristic and distinctive feature of Russian coffee houses. Of course, today you rarely meet a group of people studying a newspaper together over a cup of coffee, but modern public institutions offer a wider range of services, food and drinks. Today, you can easily order a cup of tea in a coffee shop, and order brewed coffee in a tea house. Unlike old coffee houses, modern ones are very diverse in design. They amaze with their unusual solutions, color schemes, transformations, reincarnations. Recently, an interesting trend has been noticed - during the day coffee shops are cozy corners where it is quiet and calm, and in the evening these are sports bars where you can safely order beer and watch a football match.

Many establishments today offer such a convenient addition as a wi-fi hotspot, allowing students or business people to check their mail or find useful information online. These coffee shops often attract freelancers - people who work over the Internet. Sometimes people spend the whole day in cafes, not noticing how the time has flown by. In the evening, drive and excitement await many of them - the broadcast of sports competitions begins from the large screens installed in the coffee shop. Today it is already impossible to imagine life without such fun and comfortable establishments. I wonder what we would do without a wonderful aromatic coffee drink?

The history of the cafe - this is the dispute between Italy and France. The cafe first appeared in Italy, and only then it was brought to France. But the name of the first Italian cafe has not survived. However, street coffee houses were already in Constantinople in 1550. Cafe "Prokop" (French Le Procope) - is considered the oldest restaurant in Paris, located in the Latin Quarter, on rue de l "Ancienne-Comédie", next to the crossroads of the Odeon, it became a discussion center for writers and philosophers during the Enlightenment and became the first literary cafe.

It is interesting that the words "cafe" and "coffee" are not coincidentally similar. Coffee served the development of such a type of public institutions as cafes, and in particular, coffee shops. The official history of coffee goes back about 3000 years, when the first coffee house was opened - it is not known, it is only known that the homeland of the cafe is the East, but the history of European coffee houses dates back to 1651. It was then that the first coffee shop opened in the Dutch Livorno. The innovation successfully spread throughout Europe and by the end of the 17th century, many establishments were opened in every European country, in which the twilight and aroma of coffee reigned, making the process of making coffee a mysterious ritual. Nowadays, a rare cafe in Tushino can boast of the preserved traditions of preparing this wonderful aromatic drink. It will not be a discovery that cafes were chosen by the nobility, and over time, cafes became clubs of interest: a literary cafe, a music cafe, and even the Royal Scientific Society arose from the Oxford Coffee House. But the main service of such cafes was coffee.

In Russia, the first cafe appeared at the beginning of the 19th century in Moscow and immediately this place was chosen by the creative elite. It is characteristic that the first Russian cafe immediately began to provide additional services - billiards, chess, even simple reading and subsequent discussion of newspaper news.

Modern cafes have moved away from the tradition of coffee shops and provide a wider range of different kinds of drinks and products. So, in a modern teahouse you can order a cup of coffee, and in a coffee shop you can drink tea. Both the interior of modern cafes and its transformations are varied. So, the SZAO cafe in day hours- restaurant and cafe, and in the evening - a sports bar. The owners of such establishments try to take into account the tastes and anticipate the desires of each guest, there is a fierce struggle for each visitor.

Cafes with wi-fi are not new now - such amenities are popular and in demand among students and Internet workers. The latter, in order not to be distracted by household chores, prefer a table in a cafe to their own apartment, where they will be fed and drunk at the first request in every sense of the word. By the evening, the visitors of the wi-fi cafes who have sat down turn into gambling fans, because the TVs hanging on the walls of such establishments start broadcasting sports competitions.

Cafes can be open or closed. Closed cafes resemble something like a gazebo with a roof. Many indoor cafes are not much different from indoor cafes: they have "walls" or are located under a special canopy, which undoubtedly makes them more convenient for visitors. In such cafes, visitors feel no worse than in closed indoor cafes. These cafes are ideal for hot weather, they are cool, and they do not require the use of air conditioners: people are outdoors at the same time and feel as comfortable as indoors. In addition to traditional indoor cafes, summer (street) cafes have always been very popular. Such cafes usually occupy a small area, however, summer cafes can be quite large and include several utility rooms. Summer cafes can work independently and be located along or not far from walk-through streets, or be located next to a stationary cafe. The choice of a place for an open summer cafe is of great importance: it should be easily accessible, passable, well visible for people passing by. It is desirable to have a parking lot opposite the summer cafe for visitors with cars. In most cases, the premises for the cafe are rented, although the construction of a special pavilion is also possible. The area of ​​the trading floor depends on the number of seats, which can vary from 5-6 tables (each table is usually designed for 4 people) to 15 or even more.

For a summer cafe, as well as for other types of cafes, it is necessary to have a utility room and good communications (water supply, sewerage, electricity). The complete set of equipment in summer cafes, as a rule, is limited by the availability of seats with tables for visitors, a counter-refrigerator, additional refrigerators with drinks and ice cream, a refrigerator for storing food, a display cabinet with food, a coffee machine for cooking, a microwave oven.

Different types of summer cafes are designed for different target audiences and therefore use appropriate management. In essence, a summer cafe is a small enterprise with a friendly and relaxed atmosphere, striving to form and retain the visitors of the most diverse who have come once. age groups... There are also evening summer cafes closed type where only adults and young adults have access. As a rule, summer cafes attached to the main cafe carry out separate work: they have their own buffet, their own cash desk, but the kitchen can be located in the main cafe indoors, which is why such cafes have a fairly wide range of dishes on offer. There are summer cafes, the service of which is not much different from the service of large cafes and restaurants: the tables are served here by waiters who present the menu, take orders, deliver dishes and remove them from the tables. Small summer cafes practice a minimum service or self-service system. These cafes usually do not have a menu, and the prices and names of the offered dishes are shown on the price tags, but there are several waiters who remove the used dishes from the tables. And yet, in recent years, all summer cafes have been using a menu-driven service system, which is convenient for visitors and allows waiters to better control the situation in the cafe. Food ordering and table service in summer cafes follows standard rules. Visitors occupy a free table, the task of the waiter is to approach the guests and offer them a menu. If a visitor asks the waiter if there are certain dishes on the menu, the waiter must clearly and clearly explain to the visitor what he wants. Thus, due to the small assortment, the order in the summer cafe occurs immediately, as soon as the waiter brings the menu. With a small number of visitors, the waiter brings the ordered dishes within a few minutes. If the guest has ordered a barbecue or other dish that requires cooking, then he waits at the table, at this time the waiter has the right to offer the client for drinks and serve other tables. The invoice is given to the client after he has eaten and is about to leave. The waiter's task is to keep an eye on the table all the time, bring food and drinks on time, clean up dirty dishes and change ashtrays. Beach and park cafes can also be distinguished from summer cafes. On the beach, commercial equipment can be simpler, inexpensive, and its list is rather limited. In the recreation area of ​​central parks and the busiest streets of the city, where people are used to spending more time enjoying rest and food, a summer cafe will require both better equipment and appropriate inventory - dishes, cutlery. The assortment of the simplest summer cafe is more designed for impulse buying. It can be juice, carbonated drink, ice cream. An indispensable attribute of a beach or park stall is a refrigerator for drinks and a freezer for ice cream. This is all there is to it. The traditional equipment of beach cafes is juice coolers.

1.2 Development of cafe culture in Russia

The tradition of drinking natural coffee brewed according to all the rules in a small cozy coffee shop existed back in the days of the Soviet Union. Usually this "bourgeois luxury" was enjoyed by tourists who came on vacation to the Baltic republics, Armenia, Georgia. Then the Union collapsed, and coffee houses disappeared from the life of a Russian resident, giving way to cheap instant coffee in the morning.

Since the second half of the 90s, public coffee drinking began to gradually return to everyday life, and today we can already talk about the revival of the cafe culture in Russia.

Moscow is the leader in the number of establishments serving varied quality coffee. As in the rest of the world, cafes here slept as a haven for the most democratic-minded public: creative people and students. Moreover, a shelter around the clock. It’s impossible to believe that getting a more or less acceptable "night lunch" was problematic a couple of years ago. Even today in Europe it is difficult to find a place where you can eat after 22 hours. And in Moscow at this time, many are just going to have supper. The capital is increasingly becoming a night city, so dinner starts late in the evening and ends in the early morning. Among today's youth, the concept of "after party" has become relevant: visitors to nightclubs, before heading home, are not averse to relieving emotional excitement with a cup of coffee or even an early breakfast at four or five in the morning served in a calm and cozy atmosphere. In expensive nightlife establishments, young people, as a rule, do not eat: firstly, it is expensive, in addition, food is a hindrance to lightness during dancing. But there are other clients: the staff of the same nightclubs, who, after finishing work, go to the nearest cafe for refreshments. A separate small group is made up of casual visitors waiting for the opening of the metro, rejected lovers or women on the verge of a nervous breakdown.

During the entire period of their existence, there have been no incidents with aggressive visitors in Moscow night cafes. Apparently, the process of absorbing food and a cup of coffee soothes the soul at any time of the day.

The development of our coffee culture is not going as fast as we would like. According to foreign experts, there cannot be many coffee houses in Russia yet, because, firstly, the corresponding culture of coffee consumption has not yet developed, and indeed food outside the home in general, and secondly, due to the lack of money supply among the population. If any American can afford to go to coffee houses three or four times a day and have a cup of coffee, then in Russia this is not available to everyone.

The coffee industry has significantly intensified over the past two years, and many have decided to take up this business. This is a good trend, indicating that an increasing number of people, especially those who work hard and have an urgent need for time, are accustomed to visiting coffee shops to relax and hang out with friends outside the home.

The current state of the restaurant business. The restaurant business in Russia today exists in three niches, unequal in terms of volume and number of players - fast food, mid-price restaurants and "gourmet" restaurants. In the fast food segment today, McDonald's undoubtedly dominates - the benefits of early entry affect Russian market, abandonment of the franchise scheme (in other countries, McDonald's usually opens its restaurants on a franchise) and a built-up system of personnel development within the company. By all accounts, the main competitor of McDonald's is the Rosinter chain Rostiks. Expensive author's haute cuisine restaurants, "haute cuisine", began to appear in Russia in the late 80s - early 90s of the last century: associated with the names of Arkady Novikov, Andrei Dellos and other stars, they withstood (and continue to do) comparison with boutiques. The most notable restaurants today are Pushkin and Cheese by Novikov, Le Duc and Shinok by Dellos, Uley by Oleg Bardeev, Oblomov on Presnya by Anton Tabakov, and Absinthe by Igor Bukharov. The average price niche in Russia is not only not overpopulated, but also not fully formed - it is only obvious that the threshold for entering it is getting higher every day, and the processes taking place inside are more interesting. The dominant player in this segment today is Rosinter Restaurants (TGI Fridays, American Bar & Grill, Planet Sushi, Patio Pizza, etc.) , today there is one common headache - personnel shortage. And, if the problem with hiring service personnel (waiters, sommeliers, hall managers) today mainly rests on a significant excess of supply in demand, then in the case of management personnel for restaurants everything is much more complicated. The fact is that the number of competent restaurant managers today is very limited. There is almost no tendency to increase it now - in Russia there are no specialized educational institutions who would train specialists of this level. Restaurant directors now mostly grow out of waiters, room managers, even bartenders; they are not very mobile and do not have sufficient opportunities for their further professional development. As a rule, the owner is already one step higher than the director, and it is simply impossible to take his place. As a rule, directors are extremely reluctant to change their jobs. The fact is that restaurant owners sometimes use less than market-based methods to retain competent managers.

1.3 History of fusion style

Fusion (from English fusion - mixing, merging) - mixing different styles and directions in one interior design.

A style that allows you to place anything you want in space and at the same time create harmonious connections between variegated objects and elements.

General characteristics of the fusion style. Offers everything without denying anything. He finds harmony where previously it seemed inconceivable. Fusion does not reject old traditions, but coexists with them, as it were, in parallel worlds, creating its own rules. This direction, in fact, opposes itself to minimalism - and brings us closer to a complex and expressive "maximalism". Uninhibited "hooligan chic" is in fashion - a style that develops the logic of collage and borrows any elements. The main principle of the fusion style is freedom of color and material. The main condition of the fusion style is that the forms, color and content of the designed interior - everything that will later become its "filling": finishing materials, furniture, decorative elements, should at the final stage be combined into a whole organic living space. Fusion is usually attributed not to architectural, but to design styles - the connection between objects is formed not at the functional, but at the emotional level, and it itself is not based on clearly formulated laws, but rather is a way of thinking inherent only to a part of architects. This style burst into the new millennium, rapidly sweeping ascetic minimalism, rational constructivism, and even postmodernism, which claims to be romantic, on its way. Mixing pure styles and directions, like paints on a painter's palette, fusion took root surprisingly quickly and became popular. The style of modern life of your interior - fusion (mixing everything with everything), arose as a result of the intersection of different cultures, traditions, times and even technologies. It all started with jazz in the 70s, progressive listeners spread to a special musical style that combined elements of European academic music and folklore from exotic countries. Then fusion conquered restaurants, appearing here in the form of traditional European dishes with Asian accents: it happened in the 90s, and then fashionistas with forced smiles ate Olivier salad with trepangs and foie gras, seasoned with cumin and turmeric. By the way, experiments on mixing different cuisines of the world did not always lead to decent results. Culinary fusion died out at the experimental level, and the idea of ​​interfering East and West, South and North was transferred to interiors. Art critics say that the prehistory of the emergence of this style in interior design most likely dates back to the 90s of the last century, when flows of exotic things from the East, Africa and Latin America poured into Europe, tired of the avant-garde and constant interior taboos. The United States is rightfully considered his homeland: it was the local apartment designers who were the first to venture into bold experiments and "crossed" classics with ethnicity, and Empire style with hi-tech. At the same time, luxurious carpets from the skins of "leopards" and "zebras" appeared in the fashion houses of Italy, France and Germany next to glass-metal tables and shelves. Small cubic leather sofas replaced large and fluffy luxurious American sofas, and the snow-white walls of postmodernism were filled with bright sunny colors. Inspired by the first success, the owners of villas and mansions began to act more boldly. And now the design bureaus already accredited by them are beginning to actively combine heavy classic furniture and high-tech organza curtains in one interior. Upholstered furniture moves out of the corners and takes center stage in the room, while expensive exclusive collections coexist with the most popular models. Next to masterpieces of painting or sculpture, cute family photos and souvenirs brought from travels appear on the walls. Features - the interior in the fusion style is an object of real decorating art, in which any genre is acceptable except boring. It does not provide for clear horizontals and verticals, rigid certainty is also alien to it, and connections between objects are formed not at the functional, but at the emotional level. Luxury with a touch of simplicity and bohemianism - just such a combination of concepts that was previously perceived as absurd - is becoming a trend in interior fashion. The style of the space presupposes a complex color scheme, many decorative details, an abundance of fabrics and a variety of decor, experiments with textures, stage lighting and carefully "organized" disorder. In no case should your interior give the impression of thought out to the smallest detail: the charm of the maximalist style, like the individuality of a person, is woven from mutually exclusive things.

The fusion style is based on three pillars - color, texture, materials. Neutral or pastel shades are unusual for this style. From now on, saturated and even defiant tones will prevail in your interior, nevertheless, they are in perfect harmony with each other. These can be combinations of turquoise, crimson, gold and green. It can be a warmer range of reds, oranges combined with an inky blue tint. Interesting compositions of violet-lilac paint and polar black and white are acceptable. However, it is very important not to be mistaken in the choice of ratios, not to overdo it, otherwise, instead of an exquisite palette, you risk getting a banal set of "flashy" colors. Once you've decided on a basic color scheme, you need to decide how you will present such a bold color show. There is one radical way, widely known to theatrical decorators - spot lighting. That is, instead of fully illuminating the multicolored splendor with multi-track chandeliers, you need to think over the organization of lighting so that each element included in the system creates its own mini-show - intimate and pretentious at the same time. The luminaires can be located along the lower eaves of the wall, practically at the floor. They can work as spot ceiling or wall spotlights, flashing every time various elements interior. You can actively use floor lamps, sconces, desk lamp, furniture lighting (both the top one, on the tops, and built into the cabinets). Fusion even admits that none of your lamps will be alike, but each time you turn it on or combine different lighting options, you will create a new decoration, original and unique. You can play on the contrast of non-standard materials of lighting fixtures, contrasting colors, or create a composition of lampshades of different shapes. Candles (and ideally a fireplace) do not so much illuminate as create an intriguing, mysterious twilight, simulating additional nuances of mood. And this mood will always be upbeat and romantic. As for the texture finishing materials, then the idea of ​​fusion assumes that your interior will be perceived in harmony of visual and tactile sensations. Therefore, touching the upholstery of upholstered furniture, curtain fabrics, and just the walls of your house, step on its floors, carpets, should be as pleasant as looking at them. In this regard, it is better to abandon cold and slippery glossy surfaces, preferring those textures that are most characteristic of wildlife: silky textures of fine sea sand, roughness of natural stone, coarse weaving of linen yarn, homespun canvas, elasticity of natural leather. The animalistic trend is very relevant. Skins made of animal skins (or their imitations) fit so organically into fusion that they are almost textbook objects for the elaboration of this style in the interior. Speaking of animal skins, we smoothly move on to the materials that fusion gravitates towards. We hope you have already guessed that you are practically unlimited in the choice of these materials. The most natural and natural materials will certainly give a special chic. So, in particular, classic expensive furniture framed by rough, peasant log walls will look quite interesting. Gold and silver against the background of spruce balusters will not seem like alien elements, but only a fun and stylish improvisation. And the presence of a fireplace with an adobe chimney will be very appropriate in the living room, where the walls are draped with silks matched to the same clay. By the way, drapery is one of the main instruments of fusion. Perhaps there is no other style that would allow such an abundance of fabric in the interior. This is understandable. Numerous curtains, muslin curtains, heavy curtains, alcove curtains, pillows, carpets - these are all the elements that are written to bring the interior to a common harmonious denominator. With a fairly limited budget, it is fabric that can become that lifesaver that instantly transforms your home. Moreover, it is textiles that can turn any neat and prim interior into a rather "hooligan" and bold apartment. The abundance of free space, the presence of white planes and a lot of daylight - these are the essential attributes of the fusion style. The ideal condition to create an interior in this style, architects consider housing oriented to several cardinal points at once.

When creating a fusion-style interior, remember:

Rule # 1. Better not to mix. The main postulate of fusion: less is better than more. Things are designed to emphasize and set off each other, and not clutter up your square meters.

Rule # 2. Remember good taste. It is he who should come to your aid if it suddenly seems that the notorious samovar will perfectly fit into the interior of your bedroom in the style of Louis XIV.
